I originally saw this recipe in a cooking light magazine. I have since adapted it to my hungry swimmers. Its a hearty pancake that heats up well leftover too! I sometimes use whole wheat flour when I have it instead of white flour for the extra protein. Typically my kids eat these a couple times a week during peak swim practices!






The dry ingredients are usually everything I have on hand in my pantry. So it makes it easy to make them pretty quick.
Dry Ingredients
1 Cup Oatmeal (I don’t use the quick cooking kind, but you can)
1 Cup flour (or whole wheat flour)
2 tsp baking powder
3 TBSP sugar
2 tsp cinnamon
Wet Ingredients
2 eggs
1 1/2 cups milk
1 tsp vanilla
2 TBSP melted butter
1 1/2 cups milk
1 tsp vanilla

Mix all the wet ingredients together, and add to the dry until well combined. I use a dry griddle when I make these pancakes. Because the melted butter is in the mix, I don’t use any more when I cook them. Serve with your favorite maple syrup, or confectioner’s sugar or fruit.
